Cape Town student receives internship at Restaurant JAN in Nice, France

Hospitality & Service Management - not a job but a lifestyle

Christmas has come early for 20-year-old Daniël de Bruin from Worcester in the Western Cape.

In December he will be heading to Nice on the French Riviera to take up a two-month internship at Michelin-star Restaurant JAN under the tutelage of South African culinary superstar, Jan Hendrik van der Westhuizen.

Van der Westhuizen’s journey to becoming one of the first South African chefs to be awarded a Michelin star has captured the imagination of foodies around the world. To be taken up in the Michelin firmament is arguably the culinary world’s highest honour, but to venture to France and receive the accolade in Michelin territory is a rare feat.

De Bruin and fellow IIE School of Hospitality & Service Management (HSM) student Marc Trollip were chosen for a paid internship at the restaurant with all their flights and accommodation covered.

De Bruin – who will be working front-of-house – is currently in his second year studying a degree in hospitality and service management.

He explains why he decided to study hospitality: “I originally thought of it as a career while on holiday, when a server remembered to set my place setting left-handed as I am a leftie. I was so impressed and have never forgotten it. I have pride in serving people and providing them with the best possible experience. Seeing a smile on someone’s face and the way they are enjoying themselves brings me so much pleasure. I believe the opportunities in the hospitality industry are endless and there’s plenty of room for growth in South Africa and on the global stage.”

De Bruin is counting down the days until he embarks on this once-in-a-lifetime experience.

“I want to improve on my skills in the food and beverage department. Front-of-house has different positions. For the most part, I believe I will be doing silver service waitering and hosting. Other front-of-house positions include barista, sommelier (wine waiter) and maître d’hôtel (meaning master of the house).

“Learning from Jan and working at his restaurant will be the best way for me to learn how to build a brand of my own. French cuisine has always been something I want to try and now not only do I get to learn more about it while working at JAN, but I’ll also get to learn more about French culture.”

“I have only ever been to Australia so I cannot wait to visit Europe. My parents are as excited as I am – they are both in the hospitality industry and know just what a life-changing opportunity this could be.”

De Bruin chose to study at The IIE SH&SM because he feels it promises international opportunities.

“It is because of them that I am able be do the JAN internship,” he says, “and after finishing my studies, I want to work on a Disney cruise ship and travel the world before returning to South Africa to work in the industry.

What makes for good service in his opinion?

“A person with a passion for what they do. Someone who loves the service industry will always try to please people. A person that focuses on the finer details and that pays attention to the body language and the facial expressions of people will automatically provide an overall better service.

“The hospitality industry is so diverse. You can do anything within it if you set your mind to it. Always dream big because your dreams will most likely become true. All of this is only possible if you believe in yourself and if you have a true passion for what you do.

“Never work just for the money. Someone working at the Silo Hotel in Cape Town once told me that working in the hospitality industry is not a job, it’s a lifestyle.”

PRESTIGIOUS BRITISH ACCREDITATION COUNCIL CONTINUES TO RECOGNISE IIE’S DEDICATION TO PROVIDING QUALITY EDUCATION

South Africa’s leading private higher education provider, The Independent Institute of Education (The IIE), has yet again been given the international nod of approval by The British Accreditation Council, a leading global accreditation body.

This means that students benefit from knowing that we meet international standards too. The IIE is accredited as an International Higher Education Institution by the British Accreditation Council. Locally and internationally, we have demonstrated the quality of what we offer.

Forward to matric finals: Getting your head in the game, in a game changer year

The clock is ticking for an estimated 1.1 million Matrics from the Class of 2020, who will sit for their final exams in two months’ time after arguably the most challenging year they would have faced during their school careers.

With uncertainty still lingering about much of what is to come, these students now have to ensure they get in the right frame of mind to perform to the best of their ability despite the unprecedented circumstances and novel logistical arrangements they will face, an education expert says.

“Learners must now take stock of where they are academically, and determine what ground still needs to be covered so that they are fully prepared,” says Wonga Ntshinga, Senior Head of Programme: Faculty of ICT at The Independent Institute of Education, SA’s largest and most accredited private higher education institution.

“On top of this, they need to work through any concerns around the rest of the year, exam logistics, and their future plans so that they can put aside those issues causing anxiety and focus solely on their revision,” he says.

Ntshinga says while this year’s Matrics face additional stressors on top of the regular challenges associated with Matric finals, they should know that there are more additional resources than ever before to ensure they complete their final year of school as well as possible.

“Now is the time to assess your performance to date – possibly based on your preliminary exams if your school wrote them – and see how much ground you still need to cover before exams start. And very importantly, learners need to draw up a comprehensive study schedule and stick to it. Don’t just get up every morning and wing it. You have to keep track every day to ensure you stay on schedule, and if you are not, you need to adapt your approach.”

Ntshinga says Matrics need to come to terms with the fact that things will feel strange in the exam room, so that they are fully prepared and not distracted by the logistics, such as writing while wearing a mask.

“Taking control now for your own performance is the most powerful approach to take. And remember that there are many people and organisations out there from where you can obtain additional support if you need it. By claiming your focus, you can and will make a positive difference to your results,” he says.

It is also worth remembering that the way learning happens now is the way it is likely to be for some time still.

“Even when going into higher education next year, there is likely to still be restrictions and safety precautions in place, so don’t waste precious energy fretting about the unusual nature of things, and rather embrace the situation and hone your independent learning skills.”

Women Power in the Hospitality

The hospitality environment is a demanding industry that not only requires passion and motivation at each level of the organisation but also leaders that support, guide and nurture its employees. Support, guide and nurture - three words that are more commonly associated with women and their style of management than their male counterparts. So why then are there less women in top positions in the industry than men?

According to Julia Campbell, founder of Women in Hospitality (WOHO), in 2017, the hospitality sector workforce was composed of 55.5% of women but still dominated by men in managerial positions. Another study, undertaken in 2019, found that only 11% of hotel company leadership positions (managing director, president, partner, CEO) were held by females and that the odds of a woman reaching a top leadership position, were one in eight.

The hospitality industry clearly needs more women in senior managerial positions, a viewpoint strongly shared by Nadia Barnard, principal of the Rosebank, Johannesburg, campus of The Private Hotel School (a second campus is located in Stellenbosch in the Western Cape).

Says Barnard: “Generally women tend to do better in senior roles in hospitality than men. This is due to their interpersonal skills, determination, patience, less aggressive behaviour and the capacity to recognise their mistakes and apologise.

“Furthermore, female leaders can provide a more accommodating and nurturing environment. They tend to listen to their co-workers, respect different points of view, find solutions to given problems and support their staff in a closer way than male managers. They are also more encouraging of cooperation and teamwork, delegate more and tend to be more patient than male counterparts.”

This, Barnard believes, should serve as encouragement for more women to enter the hospitality industry.

The Private Hotel School is moving away from the culinary side of the business (and leaving that up to its sister institution, Capsicum Culinary Studio) and focusing more on the management side of the business.

Barnard answers some questions:

So what courses does Private Hotel School offer that will train and prepare its female students for top roles in the industry?

The Private Hotel School has a qualification for anyone who wishes to enter the hospitality industry with the Higher Certificate in Hospitality Management – which provides successful candidates the opportunity to enter the world of hospitality with a range of interpersonal skills and a brief overview of the various departments in the traditional hospitality business.

For someone who wishes to delve deeper into the business of hospitality, there is the Advanced Certificate in Hospitality Management which offers insight into Entrepreneurship, Leadership Development and Lodging Management as some of it’s core modules.

Dynamic women in the hospitality industry who wishes to futher their careers and expand their knowledge, there is a selection of programmes offered via distance learning and online learning option.

What positions can be achieved within five years of graduation?

The nature of hospitality is in its essence is customer-service orientated. Graduates typically start out in a hospitality establishment, but an increase in demand for well-rounded customer-orientated positions are found in the financial sector and other corporate entities. Imagine the Corporate Client Liaison for a multi-national corporation or being the Operations Manager for Ocean Cay – a man-made island in the Bahamas. A variety of options are available to hospitality graduates; it only depends on the kind of person and the “skilful service with a smile”.

What message do you give the students about the road ahead?

In general I prepare young women embarking on this industry by making them aware of the prejudices they will face; they will be expected to work just as hard (or even harder) than their male-colleagues and receive less accolades unless they persist and make their individual mark on the industry. Women professionals in the hospitality industry are under the impression that they have to be hard and masculine. However, I think there is a power which comes from womanly attributes, such as nurturing and multi-tasking, whereby female employees in the hospitality industry can bring a fresh perspective on staffing, emotional intelligence and structuring a message which is appropriate to the situation.

Do you believe there is a difference in hospitality management style between men and women and - if so - what do women bring to the role that is different to their male counterparts?

I have previously worked in organisations which were headed by male and female superiors. I think the difference is not in the gender of the person you are reporting to, it is in their strength to guide, mentor and lead. You would expect a bunch of women to sit and have “tea parties” but in my opinion, I have never been part of a team of colleagues who are equally as passionate and driven as we are, not excluding our male counterparts, regardless of gender or background. It only enhances the culture in the business to succeed and deliver students to the industry who are worth their salt.

What are the rewards of working in the hospitality industry - for both men and women - and why should they consider studying at The Private Hotel School?

The rewards outweight the long shifts, difficult clients, and hard work. The intrinsic need to serve others and provide them with a wonderful experience which result in returning guests or clients (and revenue), makes hospitality core of any business. Rewards are personal and whatever your drive is, you will have a place in the hospitality industry – from ensuring a business is profitable (Financial Controller) to creating beautiful images and inviting messages which sells the business (Hospitality Sales), to the traditional operational hospitality careers in the kitchen, front of house and back of house. There is a myriad of rewards in whatever space you will find yourself in a hospitality business.

There is no doubt that once all COVID-19 related travel and hospitality restrictions are lifted, the industry will never be able to operate in quite the same way again. Hoteliers, restaurateurs and owners of all related businesses will have to make significant changes - both physical and mental - to stay on top of the game.

Says Pierre Van Heerden who is the Programme Co-ordinator and Senior Lecturer of The Private Hotel School - Rosebank: “Under the Level 3 regulations, hotels, B&Bs and guest houses have been allowed to accept customers who are travelling for business purposes only, but now that leisure stays are again permitted, holidaying and accommodation as we know it, will change forever.

"We are excited that Level 2 regulations are now in place and we are working very closely with the hospitality industry on reopening to leisure travellers, whilst at the same time keeping visitors, staff and students safe.”

According to Van Heerden, the most prominent changes to take place in the hospitality industry will revolve around hygiene practices and, aside from hotel staff constantly having to sanitise areas which are frequently visited by guests, hotels and other accommodation establishments may also have to install markers on floors to remind people of social distancing etiquette as well as offer masks and hand sanitiser to guests checking in.

It may also be sensible and practical for hotels, B&Bs, guest houses etc. to leave rooms vacant for 24 hours after a guest has left and use the time to deep clean and extensively sanitise the room before the next guest checks in. Spas and gyms may have to be closed to guests, even when the Level 2 regulations permit that gyms now can be opened. Hotel gyms are often not the most utilised facility and keeping a space such as a sweaty gym sanitized could be challenging.

Other requirements may include touch-less hand sanitiser dispensers throughout the hotel as well as spray bottles of sanitiser in each room for guest use; automated doors so there is minimal touching of handles; hand sanitiser in elevators and the number of guests per elevator limited; multi-use and unnecessary items and amenities removed from guest rooms; room service adjusted for proper delivery protocols including the sanitation of cutlery and single use condiments and the discontinuation of self-service buffets.

Says Van Heerden: “There is also going to have be significant employee education around COVID-19 and all guest protocols and procedures. Employees will have to adopt proper hand cleaning practices and follow guidelines regularly and after activities such as using the restroom, cleaning, eating, and before and after starting shifts.

“They will also have to wear appropriate PPE in accordance with regulations and be trained on proper use and disposal of PPE. All bed linen and laundry will have to be washed at the hottest temperature, the frequency of cleaning and sanitising in all high traffic areas increased and shared tools and equipment cleaned and disinfected during and after each shift or when transferred to a new employee.”

So what's on the cards for current and new students at The Private Hotel School in this regard?

“The Private Hotel School students have been thoroughly trained in dealing and working with COVID-19. They have been exposed to all necessary processes and policies and have been trained fully on the regulations and importance of the aforementioned,” says Van Heerden.

Local culinary food and hospitality institutions, Capsicum Culinary Studio (CCS) and The Private Hotel School (PHS), have partnered with youth travel specialists OVC to give their students the opportunity to work in top hotels and resorts in the US for 12 months in paid internships.

Students at both schools, who have completed or will complete a one-year certificate in professional cookery or certificate in hospitality management this year, have the opportunity to fill one of 150 spots available for 2020 when OVC visit the schools' campuses later this year to interview potential candidates.

Those who are enrolling for both the Capsicum and Private Hotel School July intake will be eligible to be interviewed by OVC and could be working in the US on completion of their course in July next year. The registration day for both CCS and PHS for the July intake takes place on Saturday, June 29 in the morning. But all campuses are open every Saturday morning from 9h00 to noon for enquiries about this this programme.

Those who qualify will then be able to include international experience to their portfolio after the paid work experience in top establishments such as Gaylord Hotels, Great Wolf Lodge or McQuire Resorts.

In less than three years, more than 550 South African students have been placed in jobs in the US by OCV (www.ovc.co.za).

Mthatha-born chef Wandile Mabija graduated from Capsicum Culinary Studio's Port Elizabeth campus in 2017 and found himself a year later at the prestigious Fairmont Austin Hotel in Austin, Texas thanks to OVC.

“It was a shock at first due to everything being new to me - from the food and the people and even the fact that they drive on the right-hand side of the road. However, it was such an amazing experience which allowed me to broaden my horizons and taught me so much.”
